Winemaking
Seven separate blocks from our own vineyards were hand picked and fermented in 5 and 3 tonne open vats. Fermentation started naturally with 'wild' yeasts, after which the wine was pressed off the skins and aged in oak barrles for 10 months.

Sweet cherry and red fruits are underlined by fragrant notes of incense, mocha and lavender
Palate
Fresh fruit supports a crisp and crunch texture, with a long firm finish. Just a touch of the usual licorice note from our vineyard.
