Spy Valley Noble Chardonnay 2009 - Paul Bourgeois

When the season allows, Chardonnay fruit is carefully hand-picked late in the season. A long, slow press gives a treacly juice that is fermented then aged in small, old French oak barrels before bottling.

Shallow and stony soils with overlying sandy loam.

Winemaking

Ripe bunches of our clone B95 chardonnay (normally reserved for Envoy Chardonnay) with a portion of 'noble rot' were hand picked and slowly pressed. Fermentation in oak stopped naturally after several weeks and the wine was aged on lees for 2 months prior to bottling.

Palate

Rich and mouthfilling but with a clean, crisp and long finish. Concentrated ripe fruit gives a sustained taste sensation.
