Spy Valley Merlot 2007 - Paul Bourgeois

This wine is produced from selected Merlot vines in a small very stony block in our Marlborough vineyard. The stony soil reduces the vigour of the vines, resulting in very intensely flavoured berries. Like the Pinot Noir, Merlot is fermented in small, traditional open-top vats. Fruit driven, with intense plum and berry flavours, soft tannins and spicy oak.

Winemaking

Our merlot and malbec blocks were hand harvested and gently crushed prior to a 'wild' fermentation. After ferment the tanks were pressed to 50% new French oak barrels, and were matured in these for 14 months prior to blending. Bottled with minimal filtration.

Deep red with violet/purple hues

Bouquet

Rich dark berry fruits, chocolate and spice. Subtle floral notes.

Palate

Mouthfilling and smoth, with ripe sweet fruit flavours of plums and currants. The structure is generous, smooth and long.
