Winemaking

After picking and pressing equal portions of Chardonnay and Pinot Noir were tank fermented. At the end of fermentation the wines were aged on the yeast lees for four months prior to blending and tirage bottling. After bottle fermentation and a further four years of lees aging the wine was disgorged and prepared for release.

A very rich mixture of mushroom, strawberry and yoghurt.

Palate

The generosity continues to flow through the palate. This is a full bodied style with a fine and elegant finish.
