Winemaking
The grapes were hand-harvested and whole-bunch pressed with the free run juice separated. After settling, the juice was fermented in stainless steel until dry. The base wines then underwent malolactic fermentation and matured on gross lees for six months prior to blending. The final blend was then tirage bottled and matured on lees for 18 months prior to disgorgement.
