Spy Valley Echelon 2005

Started initially as our 'party supply' bubbly, the Echelon methode traditionelle has gained momentum and is now a key component in the brand family. Echelon represents the lighter side of life, fun, lively and the place you most want to be.

Winemaking

The grapes were hand-harvested and whole-bunch pressed with the free run juice separated. After settling, the juice was fermented in stainless steel until dry. The base wines then underwent malolactic fermentation and matured on gross lees for six months prior to blending. The final blend was then tirage bottled and matured on lees for 18 months prior to disgorgement.

Fresh bouquet of apples and berry fruits, well-integrated with biscuit and marzipan derived aromas.

Palate

A stylish wine. Tightly structured apple and citrus flavoured palate with underlying creaminess and a long, lingering finish.
